Salad of bell peppers with feta

Here's a simple recipe for a refreshing salad of bell peppers with feta:

Ingredients:

  • 3 bell peppers (use a mix of red, yellow, and green for color)
  • 100g (3.5 oz) feta cheese, crumbled
  • 1 small red onion, thinly sliced
  • A handful of fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar (or lemon juice)
  • Salt and pepper, to taste
  • Optional: A pinch of dried oregano or fresh basil leaves

Instructions:

  1. Prepare the Bell Peppers: Wash the bell peppers and remove the seeds and stems. Slice them into thin strips.

  2. Combine the Ingredients: In a large salad bowl, combine the sliced bell peppers, red onion, and chopped parsley.
